Eating these piping hot liquid filled parcels can be a tricky undertaking, so here is an easy 3-step guide to consuming XLB.

1) Mix your dipping sauce: 3 parts vinegar and 1 part soy for maximal deliciousness. Add sliced ginger if you fancy.

2) Place a layer of sauce in spoon. With chopsticks, delicately peel XLB off basket by its pleated tip, where the skin is thickest (and least likely to break).

3) Take a bite of the tip, allowing the XLB to air out a bit. Sip the soup to the extent that it’s not burning you. Then take a big gulp and take it all in: soup, pork, sauce and all. Revel in the party happening in your mouth.
