Beef noodle is one of the prize national dishes of Taiwan, and on Yong Kang Jie (which means Yong Kang street), you can find many options which offer it. The noodles are made by hand and seasoned with chilli (you can ask for varying levels of spice by saying “xiao la”, “zhong la”; literal translation: small spice & medium spice) and the beef comes stewed or braised and if done right, melts in your mouth. As if that weren’t enough, the real star of the show is the resulting broth, which reveals a flavorful cornucopia of savory spice, starch, and meat. To counteract the hotness of beef noodle, pair with side dishes like cucumber, seaweed, and tofu to cool things down.
